Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar (plus extra for dusting)
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 cup finely chopped pecans (or walnuts, if preferred)
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat for easy cleanup.
  2. In a large mixing bowl, cream together the softened butter and powdered sugar using an electric mixer or a hand whisk until smooth and fluffy, about 2-3 minutes.
  3. Add the vanilla extract and mix until fully incorporated.
  4. Gradually add the flour, salt, and finely chopped pecans to the butter mixture. Mix until a soft dough forms. The dough should be slightly sticky, but firm enough to roll into balls.
  5. Roll the dough into small balls, about 1 inch in diameter. Place the balls on the prepared baking sheet, spacing them about 1 inch apart.
  6. Bake the cookies in the preheated oven for 12-15 minutes, or until they are lightly golden on the bottom. Be careful not to overbake them, as they should stay soft and delicate.
