Peanut Butter Chicken is a savory and creamy dish featuring tender chicken cooked in a rich peanut butter sauce. This comforting meal is packed with flavor and pairs perfectly with rice or noodles, offering a unique and satisfying twist on traditional chicken dishes.

Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • 2 tbsp olive oil or vegetable oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated (or 1 tsp ground ginger)
  • 1/4 cup peanut butter (creamy or chunky)
  • 1/2 cup coconut milk (or heavy cream for a richer sauce)
  • 2 tbsp soy sauce (or tamari for gluten-free)
  • 1 tbsp honey (or maple syrup for a vegan option)
  • 1 tsp lime juice
  • 1/2 tsp chili flakes or 1 small chili (optional for heat)

  • Fresh cilantro, for garnish

Instructions

  1. Prepare the chicken: Season the chicken breasts or thighs with salt and pepper on both sides.
  2. Cook the chicken: Heat the oil in a large skillet or pan over medium-high heat. Add the chicken and cook for about 5-6 minutes per side, or until the chicken is golden brown and cooked through (internal temperature should reach 165°F/74°C). Remove the chicken from the pan and set it aside.
  3. Make the peanut butter sauce: In the same skillet, add the chopped onion and cook for about 2-3 minutes until it softens. Add the minced garlic and grated ginger, cooking for another minute until fragrant.
  4. Add the peanut butter sauce ingredients: Reduce the heat to medium and add the peanut butter, coconut milk, soy sauce, honey, and lime juice to the pan. Stir well to combine the ingredients and create a smooth, creamy sauce. If you like a bit of heat, add chili flakes or a chopped chili at this point.
  5. Return the chicken to the pan: Place the cooked chicken back into the pan with the peanut butter sauce. Spoon the sauce over the chicken and let it simmer for about 5-7 minutes to allow the chicken to absorb the flavors and the sauce to thicken slightly.
