½ cup granulated sugar
½ cup brown sugar
1 large egg
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
1 teaspoon baking soda
¼ teaspoon salt
Extra granulated sugar for rolling
Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a large bowl, cream together the butter, peanut butter, granulated sugar, and brown sugar until smooth and fluffy.
Add the egg and vanilla extract, mixing until fully combined.
In a separate bowl, whisk together the flour, baking soda, and salt.
Gradually mix the dry ingredients into the wet ingredients until a soft cookie dough forms.
Roll the dough into 1-inch balls.
Roll each dough ball in granulated sugar to coat.
Place the dough balls on the prepared baking sheet about 2 inches apart.
Bake for 8–10 minutes, until the cookies are lightly golden and slightly puffed.
Immediately press a chocolate kiss candy into the center of each cookie while they are still warm.
Press the chocolate candy into the cookies right after baking so it melts slightly and sticks.Small cracks in the cookies are normal and part of the classic look.Avoid overbaking to keep the cookies soft and chewy. For extra flavor, roll the dough balls in cinnamon sugar instead of plain sugar. If the dough becomes too soft, chill it for 20 minutes before baking.
