  • 1/2 cup sugar (adjust to taste)
  • 1 tbsp lemon juice
  • 1/4 cup water (or more as needed)
  • Optional: 1 tsp vanilla extract or 1 tbsp honey

Instructions

  1. Prepare peaches: Peel, pit, and chop peaches. Optionally freeze for a few hours for a firmer sorbet.
  2. Blend: In a blender or food processor, combine peaches, sugar, lemon juice, and water. Blend until smooth. Taste and adjust sweetness.
  3. Churn (if using machine): Pour mixture into an ice cream maker and churn 20–25 minutes.
  4. Without machine: Pour into a shallow container, freeze, and stir/scrape every 30 minutes for 3 hours until sorbet-like texture is achieved.
  5. Freeze: Transfer sorbet to an airtight container and freeze 1–2 more hours for a firmer texture.
  6. Serve: Scoop into bowls or cones. Garnish with mint or peach slices if desired.

Notes

Add fresh basil or mint for a herbal twist.Blend in raspberries or strawberries for a berry mix.Use honey, maple syrup, or agave instead of sugar for natural sweetness.Swap lemon juice for lime juice or zest for extra citrus flavor.Let sorbet sit at room temperature for a few minutes before scooping if too firm.
