Ingredients

  • For the Peach Filling

  • 5 cups fresh peaches, peeled and sliced

  • ½ cup granulated sugar

  • ¼ cup brown sugar

  • 1 tablespoon lemon juice

  • 1 tablespoon cornstarch

  • ½ teaspoon ground cinnamon

  • ¼ teaspoon salt

  • 1 teaspoon vanilla extract

For the Cobbler Topping

  • 1 cup all-purpose flour

  • ¼ cup granulated sugar

  • 1 teaspoon baking powder

  • ¼ teaspoon salt

  • ½ cup unsalted butter, cold and cubed

  • ½ cup milk

Instructions

  • Preheat the oven to 375°F (190°C) and lightly grease an 8×8 or 9×9-inch baking dish.

  • In a large bowl, combine the sliced peaches, granulated sugar, brown sugar, lemon juice, cornstarch, cinnamon, salt, and vanilla extract. Mix until the peaches are evenly coated.

  • Transfer the peach mixture to the prepared baking dish and spread it evenly.

  • In another bowl, whisk together the flour, sugar, baking powder, and salt for the topping.

  • Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.

  • Stir in the milk until a soft batter forms.

  • Drop spoonfuls of the topping evenly over the peach filling, leaving small gaps so the fruit can bubble through while baking.

  • Bake for 40–45 minutes, until the topping is golden brown and the peach filling is bubbling around the edges.

  • Remove from the oven and allow the cobbler to cool slightly before serving

Notes
