The Peach Bellini is a refreshing, sparkling cocktail made with sweet peach purée . It’s light, fruity, and elegant—perfect for brunch, celebrations, or warm summer days.

Ingredients

  • 23 ripe peaches (fresh or frozen), peeled and pitted
  • 1 tsp lemon juice (optional)
  • 12 tsp sugar or simple syrup (optional, to taste)
  • Ice (optional, for blending if using frozen peaches)
  • Peach slices or mint sprigs (optional, for garnish)

Instructions

  1. In a blender, combine peeled and pitted peaches with lemon juice and sugar/simple syrup, if using. Blend until smooth.
  2. Optional: Strain the purée through a fine mesh sieve for a smoother texture.
  3. Chill the peach purée in the refrigerator for 15–30 minutes, or until cold.
  4. To serve, spoon 2–3 tablespoons of peach purée into each champagne flute.

  6. Stir lightly to combine and serve immediately.
  7. Garnish with a peach slice or mint sprig if desired.

Notes

Use frozen peaches for a slushy-style Bellini.Canned peaches (in juice) can be used—drain before blending.,  Make the peach purée ahead of time and store in the fridge up to 3 days.Add sugar only if your peaches are not sweet enough.
