Ingredients

  • 6 cups crusty Italian bread or sourdough bread, cubed
  • 4 ripe tomatoes, chopped
  • 1 cucumber, sliced or diced
  • 1 small red onion, thinly sliced
  • 1 bell pepper, chopped
  • ½ cup fresh basil leaves, torn
  • 2 garlic cloves, minced
  • ⅓ cup olive oil
  • 3 tablespoons red wine vinegar
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup mozzarella pearls or shaved Parmesan (optional)
  • 1 tablespoon capers (optional)

Instructions

  • Cut the bread into bite-sized cubes and let it dry slightly, or toast it lightly in the oven at 350°F (175°C) for about 10 minutes until crisp.
  • Chop the tomatoes, cucumber, bell pepper, and red onion into bite-sized pieces.
  • In a large bowl, combine the tomatoes, cucumber, bell pepper, red onion, and fresh basil.
  • In a small bowl, whisk together olive oil, red wine vinegar, minced garlic, salt, and black pepper.
  • Add the bread cubes to the vegetable mixture.
  • Pour the dressing over the salad and toss gently until evenly coated.
  • Let the salad rest for 15–20 minutes so the bread absorbs the flavorful dressing and tomato juices.
  • Add mozzarella pearls, Parmesan cheese, or capers if desired.
  • Taste and adjust seasoning before serving.
