Panna Cotta with Berry Sauce is a silky, creamy Italian dessert made with sweetened cream and gelatin, topped with a vibrant mixed berry sauce. It’s an elegant, no-bake treat perfect for entertaining or a romantic evening.

Ingredients

  • 1 cup whole milk
  • 1 tablespoon unflavored gelatin
  • 2 cups heavy cream
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract (or 1/2 teaspoon vanilla bean paste)
  • Pinch of salt
  • 2 cups mixed berries (fresh or frozen – strawberries, raspberries, blueberries, blackberries)
  • 2 tablespoons sugar (for berry sauce)
  • 1 tablespoon lemon juice
  • 12 tablespoons water (optional, to thin berry sauce)

Instructions

  1. In a small bowl, sprinkle gelatin over the milk and let sit for 5–10 minutes to bloom.
  2. In a saucepan over medium heat, combine heavy cream, sugar, and a pinch of salt. Heat until sugar dissolves and mixture is hot, but do not boil.
  3. Remove from heat and stir in the bloomed gelatin until fully dissolved. Add vanilla extract and mix well.
  4. Pour the mixture into ramekins or serving glasses. Let cool to room temperature, then refrigerate for at least 4 hours or overnight until set.
  5. For the berry sauce, combine berries, 2 tablespoons sugar, and lemon juice in a small saucepan. Simmer over medium heat for 10–12 minutes, lightly mashing the berries. Add water if needed to adjust consistency. Let cool completely.
  6. To serve, unmold panna cotta onto plates (or serve in glasses) and spoon the berry sauce on top. Garnish with fresh berries or mint if desired.

Notes

To unmold panna cotta, dip ramekins in warm water for a few seconds and invert onto plates.For a smoother berry sauce, blend and strain through a fine mesh sieve.You can adjust sugar to taste in both panna cotta and berry sauce.Use frozen berries straight from the freezer for convenience.
