Ingredients

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp salt

  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/4 cup raisins or dried cranberries (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a loaf pan (8×4-inch or 9×5-inch) with parchment paper or lightly grease it with coconut oil.
  2. In a large bowl, whisk together the almond flour, coconut flour, baking soda, cinnamon, nutmeg, ginger, and salt until fully combined.
  3. In another bowl, whisk together the eggs, maple syrup (or honey), melted coconut oil, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and stir until well combined.
  5. Gently fold in the shredded carrots, nuts, and raisins (if using) until evenly distributed throughout the batter.
  6. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  7. Bake for 40-45 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
  8. Allow the loaf to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  9. Slice and serve once cooled, or store in an airtight container at room temperature for up to 4 days.

Notes

For a vegan version, replace the eggs with a flax or chia egg (1 tbsp flaxseed meal + 3 tbsp water for each egg). You can add a paleo-friendly frosting made from dairy-free cream cheese, coconut milk, and maple syrup for a more decadent treat. To make this loaf more tropical, add 1/2 cup of finely chopped pineapple for extra moisture. For extra spice, add a pinch of ground cloves or allspice. If you’d prefer individual servings, divide the batter into muffin tins and bake for 20-25 minutes.
