Boursin chicken is a creamy, one-skillet meal featuring tender seared chicken breasts smothered in a rich, herby garlic Boursin cheese sauce. It’s quick, comforting, and perfect for both weeknight dinners and special occasions.

Ingredients

  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 tbsp olive oil or butter
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 (5.2 oz) package Boursin Garlic & Fine Herbs cheese
  • 1/4 cup heavy cream (optional)
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Optional: 1 cup fresh spinach
  • Optional: 1/2 cup sautéed mushrooms
  • Optional: 1/4 cup sun-dried tomatoes

Instructions

  1. Season chicken on both sides with salt and pepper.
  2. Heat olive oil or butter in a large skillet over medium-high heat.
  3. Add chicken and sear for 4–5 minutes per side, or until golden and cooked through. Remove and set aside.
  4. Lower heat to medium. Add minced garlic and sauté for 30 seconds until fragrant.
  5. Pour in chicken broth and stir to deglaze the pan, scraping up any browned bits.
  6. Add Boursin cheese and stir until melted and smooth. Stir in heavy cream if using.
  7. Return chicken to skillet and simmer in the sauce for 3–5 minutes to heat through.
  8. Optional: Stir in spinach, mushrooms, or sun-dried tomatoes.
  9. Garnish with chopped parsley and serve warm.

Use chicken thighs for an even juicier option.Keep heat moderate to prevent curdling the sauce.A splash of white wine can replace part of the broth for extra flavor.Pairs well with pasta, mashed potatoes, or roasted veggies.Reheat gently with a splash of broth or cream to maintain sauce texture.
