One Pot Ground Beef and Broccoli with Rice is a quick, easy, and flavorful meal that combines lean ground beef, nutritious broccoli, and hearty rice. Made in one pot, it’s a perfect weeknight dinner option for busy families or meal prepping.

Ingredients

  • 1 lb ground beef
  • 1 cup rice (white, brown, or jasmine)
  • 2 cups broccoli florets
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce (or coconut aminos for paleo/soy-free)
  • 1 tbsp sesame oil (or olive oil)
  • 1/2 cup beef broth (or vegetable broth)
  • 1/4 tsp ground black pepper
  • 1/2 tsp ground ginger (optional)
  • 1 tbsp green onions, sliced (for garnish)

Instructions

  1. In a large pot or skillet, heat the sesame oil over medium heat. Add the diced onion and garlic, cooking until the onion is translucent, about 3-4 minutes.
  2. Add the ground beef to the pot, breaking it up as it cooks. Cook until browned, about 5-7 minutes.
  3. Stir in the soy sauce, ground black pepper, and ground ginger (if using), and mix well to coat the beef.
  4. Add the rice and beef broth to the pot. Stir to combine.
  5. Bring the mixture to a simmer, then reduce the heat to low. Cover the pot and cook for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  6. While the rice is cooking, steam the broccoli florets until tender, about 5 minutes. You can steam them in a separate pot or microwave them with a bit of water in a covered dish for 2-3 minutes.
  7. Once the rice is cooked, gently stir in the steamed broccoli. Cover the pot and let it sit for 5 minutes to allow the flavors to meld.
