  • 1 bell pepper, sliced
  • 1 cup mushrooms, sliced
  • 1 teaspoon paprika
  • Salt, to taste
  • Black pepper, to taste
  • 2 green onions, sliced
  • Sesame seeds, for garnish

Instructions

  • Heat olive oil in a large pot or deep skillet over medium heat.
  • Add the chopped onion and cook until softened.
  • Stir in the garlic and cook for about 30 seconds.
  • Add the ground beef and cook until browned, breaking it apart as it cooks.
  • Drain excess grease if necessary.
  • Stir in carrots, bell peppers, and mushrooms, cooking for 3–4 minutes until slightly tender.
  • Add tomato paste, soy sauce, paprika, salt, and black pepper.
  • Pour in the beef broth and bring the mixture to a simmer.
  • Add the noodles directly into the pot and stir well.
  • Cover and cook according to the noodle package instructions, stirring occasionally until the noodles are tender and most of the liquid is absorbed.
  • Taste and adjust seasoning if needed.
  • Garnish with sliced green onions and sesame seeds before serving.

Notes

  • Ramen, egg noodles, spaghetti, or udon noodles all work well.
  • Stir occasionally to keep the noodles from sticking together.
  • Add spinach or bok choy during the last few minutes of cooking for extra greens.
  • Use low-sodium soy sauce to control the saltiness.
  • A splash of cream or shredded cheese can make the sauce richer and creamier
