Ingredients

  • 1 tbsp instant espresso powder
  • 1/3 cup chopped nuts or chocolate chips

Instructions

  1. In a medium saucepan, whisk together oat milk, sugar (or maple syrup), and salt.
  2. In a small bowl, mix cornstarch with 3 tbsp of the oat milk mixture to create a slurry.
  3. Heat the saucepan over medium heat until the mixture is hot but not boiling.
  4. Stir in the cornstarch slurry and cook, stirring constantly, for 5–7 minutes until slightly thickened.
  5. Remove from heat and stir in vanilla extract and coconut oil (if using).
  6. Let the mixture cool to room temperature, then refrigerate for 2–4 hours until well chilled.
  7. Pour into an ice cream maker and churn according to the manufacturer’s instructions (usually 20–30 minutes).
  8. Transfer to a freezer-safe container, cover, and freeze for at least 2 hours until firm.
  9. Let sit at room temperature for 5–10 minutes before scooping for best texture.
