Ingredients

  • 1 cup butterscotch chips
  • 1 cup creamy peanut butter
  • 3 cups quick oats
  • 1 cup granulated sugar
  • 1/2 cup milk
  • 1/2 cup butter
  • 1 tsp vanilla extract
  • Optional: 1/2 cup shredded coconut
  • Optional: 1/2 cup chopped nuts
  • Optional: 1/2 cup mini marshmallows

Instructions

  1. In a medium saucepan over medium heat, combine the sugar, milk, and butter.
  2. Stir constantly and bring the mixture to a gentle boil. Let it boil for 1–2 minutes, then remove from heat.
  3. Stir in the butterscotch chips and peanut butter until completely melted and smooth.
  4. Add the oats and vanilla extract. Mix well to combine.
  5. If using add-ins like coconut, nuts, or marshmallows, fold them in now.
  6. Drop spoonfuls of the mixture onto wax paper or a parchment-lined baking sheet.
  7. Let the cookies set at room temperature for about 30–45 minutes, or refrigerate for faster setting.
