My Chocolate and Almond Fondant is a decadent dessert that combines the rich flavors of chocolate and almonds with a gooey molten center. With a delicate, crisp exterior, this indulgent treat is perfect for special occasions or when you’re craving something luxurious. The fondant is easy to prepare and provides an unforgettable chocolate experience.

Ingredients

  • 1/2 cup dark chocolate (chopped or chips)
  • 1/4 cup unsalted butter
  • 1/4 cup almond flour (or ground almonds)
  • 1/4 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 2 large eggs
  • 2 egg yolks
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • Pinch of salt
  • 1 tablespoon cocoa powder (optional, for extra chocolate flavor)
  • 1/4 cup chopped almonds (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease and flour four individual ramekins (about 4-5 oz each), or line the bottoms with parchment paper.
  2. In a heatproof bowl, combine the dark chocolate and butter. Melt together in the microwave in short bursts (20-30 seconds) or using a double boiler, stirring occasionally. Let cool slightly.
  3. In a separate bowl, whisk together almond flour, all-purpose flour, powdered sugar, cocoa powder (if using), and a pinch of salt.
  4. In a large mixing bowl, whisk the eggs, egg yolks, vanilla extract, and almond extract until well combined.
  5. Slowly pour the melted chocolate and butter mixture into the egg mixture, stirring gently. Gradually fold in the dry ingredients until just combined.
  6. Divide the batter evenly between the ramekins, leaving some space at the top to prevent overflow during baking.
  7. Bake for 12-14 minutes, until the edges are set and slightly puffed, but the center remains soft and wobbly.
  8. Let the fondants rest for 1-2 minutes before inverting the ramekins onto plates. Garnish with chopped almonds, powdered sugar, or serve with vanilla ice cream.
  9. Serve immediately, slicing into the fondant to reveal the molten center.

Notes

For a different twist, swap the dark chocolate for milk or white chocolate, or experiment with hazelnuts or pistachios for the nutty flavor.Consider adding a splash of coffee or orange zest to enhance the chocolate flavor. For a vegan option, use plant-based butter and flax eggs to replace the eggs and butter.
