Ingredients

  • 1 baguette, sliced into ½-inch rounds

  • 2 tablespoons olive oil (plus more for brushing)

  • 1 tablespoon unsalted butter

  • 12 ounces mixed mushrooms (cremini, button, or shiitake), sliced

  • 2 garlic cloves, minced

  • 1 teaspoon fresh thyme leaves

  • ¾ teaspoon salt (or to taste)

  • ½ teaspoon black pepper

  • 2 tablespoons fresh parsley, chopped

  • ¼ cup grated Parmesan cheese (optional)

Instructions

  • Preheat oven to 400°F (200°C).

  • Arrange baguette slices on a baking sheet and brush lightly with olive oil.

  • Toast for 8–10 minutes, until golden and crisp. Set aside.

  • Heat olive oil and butter in a large skillet over medium heat.

  • Add sliced mushrooms in a single layer. Cook undisturbed for a few minutes to brown, then stir and continue cooking until tender and golden, about 6–8 minutes.

  • Add minced garlic and fresh thyme. Cook for 30 seconds until fragrant.

  • Season with salt and black pepper.

  • Remove from heat and stir in chopped parsley.

  • Spoon warm mushroom mixture over toasted bread slices.

  • Sprinkle with grated Parmesan if desired.

  • Serve immediately while warm.
