1 baguette, sliced into ½-inch rounds
2 tablespoons olive oil (plus more for brushing)
1 tablespoon unsalted butter
12 ounces mixed mushrooms (cremini, button, or shiitake), sliced
2 garlic cloves, minced
1 teaspoon fresh thyme leaves
¾ teaspoon salt (or to taste)
½ teaspoon black pepper
2 tablespoons fresh parsley, chopped
Preheat oven to 400°F (200°C).
Arrange baguette slices on a baking sheet and brush lightly with olive oil.
Toast for 8–10 minutes, until golden and crisp. Set aside.
Heat olive oil and butter in a large skillet over medium heat.
Add sliced mushrooms in a single layer. Cook undisturbed for a few minutes to brown, then stir and continue cooking until tender and golden, about 6–8 minutes.
