Mujadara is a classic Middle Eastern dish made with lentils, rice, and caramelized onions. It’s a wholesome, budget-friendly, and naturally vegan recipe that’s comforting, flavorful, and perfect as a main dish or side.

Ingredients

  • 1 cup brown or green lentils
  • 3/4 cup long-grain rice (such as basmati)
  • 1/4 cup olive oil
  • 3 large yellow onions, thinly sliced
  • 2 cloves garlic, minced (optional)
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1 1/2 teaspoons salt (or to taste)
  • 1/2 teaspoon black pepper
  • 4 cups water or vegetable broth

Instructions

  1. Rinse lentils and rice separately and set aside.
  2. In a large pot, heat olive oil over medium heat. Add sliced onions and cook slowly until deeply caramelized, about 25–30 minutes. Remove half of the onions and set aside for topping.
  3. Add garlic (if using), cumin, and coriander to the pot with the remaining onions. Stir for 1 minute until fragrant.
  4. Add lentils and water or broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
  5. Stir in rice, salt, and pepper. Cover and cook for another 20 minutes, until rice and lentils are tender.
  6. Remove from heat and let sit covered for 5 minutes, then fluff with a fork.
  7. Serve topped with the reserved caramelized onions.

Notes

Add cinnamon, allspice, or turmeric for a spiced version.Use bulgur or quinoa instead of rice for variation.Mix in spinach, kale, or roasted carrots for extra veggies.Top with toasted pine nuts or almonds for crunch.Serve with Greek yogurt or salad on the side.Store in the fridge for up to 4 days or freeze for 2 months.
