Muffin Mix Pancakes are an easy and quick breakfast treat made using a simple muffin mix. These fluffy, soft pancakes are perfect for busy mornings and can be customized with your favorite toppings and mix-ins.

Ingredients

  • 1 box (about 8.5 oz) muffin mix (any flavor, such as blueberry, chocolate chip, or banana nut)
  • 1/2 cup milk (or as directed on the muffin mix box)
  • 1 egg
  • 2 tablespoons melted butter or oil
  • Optional toppings: syrup, fresh fruit, whipped cream, or powdered sugar

Instructions

  1. In a medium bowl, whisk together the muffin mix, milk, egg, and melted butter (or oil) until smooth. If the batter is too thick, add a little more milk to reach your desired consistency.
  2. Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or cooking spray.
  3. Pour about 1/4 cup of batter onto the hot skillet for each pancake. Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for another 1-2 minutes, until golden brown on both sides.
  4. Remove the pancakes from the skillet and stack them on a plate. Serve immediately with your favorite toppings such as syrup, fresh fruit, or whipped cream.
  5. Enjoy your fluffy, easy Muffin Mix Pancakes!

Notes

You can add mix-ins like chocolate chips, blueberries, or chopped nuts to the batter before cooking for added flavor. If you prefer a dairy-free option, use almond milk or oat milk, and replace butter with a dairy-free substitute.Feel free to experiment with different muffin mixes like banana nut, cinnamon, or lemon for variety. For a vegan version, substitute the egg with a flax egg (1 tablespoon ground flaxseed + 2.5 tablespoons water) and use non-dairy milk and oil instead of butter.
