Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 zucchini, chopped
  • 2 potatoes, diced
  • 1 can diced tomatoes
  • 2 tbsp tomato paste
  • 6 cups vegetable broth
  • 1 can kidney beans, drained and rinsed
  • 1 can cannellini beans, drained and rinsed
  • 1 cup green beans, chopped
  • 1 cup small pasta (ditalini or elbow)
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and black pepper to taste
  • 2 cups fresh spinach or kale
  • Grated parmesan cheese (optional)

Instructions

  • Heat olive oil in a large pot over medium heat. Add onion and sauté until soft and translucent.
  • Stir in garlic, carrots, and celery. Cook for 3–4 minutes until fragrant.
  • Add zucchini and potatoes, then mix in tomato paste and cook for 1 minute.
  • Pour in diced tomatoes and vegetable broth. Add oregano, basil, salt, and pepper. Bring to a boil.
  • Reduce heat and simmer for 20 minutes.
  • Add beans and green beans. Simmer another 10 minutes until vegetables are tender.
  • Stir in pasta and cook until al dente according to package instructions.
  • Add spinach or kale and cook until wilted.
  • Taste, adjust seasoning, and serve hot with parmesan cheese if desired.
