Middle Eastern Kofta Kebabs are juicy, spiced meat skewers made with ground beef or lamb, fragrant herbs, and warming spices. They’re perfect for grilling, baking, or pan-searing and pair beautifully with pita, rice, or salad for a flavorful, protein-rich meal.

Ingredients

  • 1 lb ground beef, lamb, or a combination
  • 1 small onion, finely grated
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, finely chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 1/2 tsp allspice
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper or chili flakes (optional)
  • 1 tbsp olive oil (for brushing)
  • 810 wooden or metal skewers

Instructions

  1. If using wooden skewers, soak them in water for at least 30 minutes.
  2. In a large bowl, combine ground meat, grated onion, garlic, parsley, and all spices.
  3. Mix thoroughly by hand until well combined and the mixture holds together.
  4. Divide the mixture into 8–10 equal portions.
  5. Shape each portion into a sausage-like log around a skewer, pressing firmly to adhere.
  6. Preheat a grill, grill pan, or skillet over medium-high heat. Lightly brush kebabs with olive oil.
  7. Cook for 10–12 minutes, turning occasionally, until browned on all sides and cooked through.
  8. Remove from heat and let rest for a few minutes before serving.
