Mexican Tortilla Rollups are a fun, flavorful, and easy-to-make appetizer that combines a creamy filling with savory ingredients, all wrapped in soft tortillas. Perfect for parties, game days, or casual get-togethers, these bite-sized snacks are customizable to suit any taste—mild or spicy!

Ingredients

  • 4 large flour tortillas

  • 8 oz cream cheese, softened

  • 1 cup sour cream

  • 1 tablespoon taco seasoning (or to taste)

  • 2 tablespoons salsa (mild or hot, depending on preference)

  • 1 tablespoon fresh lime juice (optional)

  • ½ cup finely chopped green onions

  • ½ cup black olives, chopped (optional)

  • 1 cup shredded cheddar cheese (or Mexican blend cheese)

  • 12 tablespoons finely chopped jalapeños (optional, for heat)

Instructions

  • Preparing the Filling:

    • Mix the base ingredients: In a medium bowl, combine the softened cream cheese, sour cream, taco seasoning, and salsa. Stir until smooth.

    • Add extras: Stir in lime juice (if using), green onions, olives, shredded cheese, and jalapeños (if using). Taste and adjust seasoning as desired.

  • Assembling the Rollups:

    • Prepare the tortillas: Lay the flour tortillas flat. If they’re too stiff, warm them in the microwave for 10-15 seconds.

    • Spread the filling: Evenly spread the cream cheese mixture onto each tortilla, leaving a small border around the edges.

    • Roll them up: Carefully roll up each tortilla tightly without squeezing out the filling.

    • Slice the rollups: Using a sharp knife, slice the rolled tortillas into bite-sized pieces, about 1-inch thick. Arrange them on a serving platter.

  • Serving:

    • Chill (optional): Refrigerate for 30 minutes to an hour to let the flavors meld, or serve immediately.

    • Serve and enjoy: These rollups are perfect on their own or served with your favorite dip.
