A refreshing Mediterranean-inspired chicken salad made with tender chicken, crisp vegetables, olives, and feta, all tossed in a creamy homemade tzatziki dressing. Light, protein-packed, and perfect for lunch, dinner, or meal prep.

Ingredients

  • 2 cups cooked chicken breast, shredded or diced
  • 1 cucumber, diced (seeds removed if desired)
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/3 cup Kalamata olives, pitted and sliced
  • 1/3 cup feta cheese, crumbled
  • 2 tbsp fresh parsley or dill, chopped
  • 1 cup Greek yogurt
  • 2 garlic cloves, minced
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper

Instructions

  1. In a small bowl, make the tzatziki dressing by combining Greek yogurt, garlic, lemon juice, olive oil, salt, and pepper. Mix well until smooth.
  2. In a large mixing bowl, combine chicken, cucumber, cherry tomatoes, red onion, olives, and feta cheese.
  3. Add the tzatziki dressing and toss until everything is evenly coated.
  4. Garnish with fresh parsley or dill before serving.
  5. Serve chilled as a salad, in a pita wrap, or over a bed of greens.

Notes

Use rotisserie chicken for convenience.Swap parsley for fresh dill or mint for a flavor twist.Add roasted red pepers or artichoke hearts for extra Mediterranean flavor.For a dairy-free version, use plant-based yogurt and omit the feta.Keep dressing separate if preparing ahead to avoid soggy vegetables.
