This Meat Zucchini Casserole recipe is a hearty, low-carb dinner made with layers of tender zucchini, seasoned ground beef, rich marinara sauce, and melted mozzarella and Parmesan cheese. 3 medium zucchini, sliced into thin rounds
1 pound ground beef
1 small onion, finely chopped
2 cloves garlic, minced
2 cups marinara sauce
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/2 teaspoon black pepper
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
Preheat oven to 375°F (190°C). Lightly grease a baking dish.
Heat olive oil in a large skillet over medium heat. Add chopped onion and cook until softened.
Stir in garlic and cook for about 30 seconds until fragrant.
Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess grease if needed.
Stir in marinara sauce, Italian seasoning, salt, and pepper. Simmer for 5–7 minutes.
Arrange a layer of sliced zucchini in the bottom of the prepared baking dish.
Spoon half of the meat sauce over the zucchini, then sprinkle with mozzarella and Parmesan.
Repeat layers, finishing with the remaining cheese on top.
Bake for 25–30 minutes, or until cheese is melted, bubbly, and lightly golden.
Let rest for 5–10 minutes before serving.
