This Mashed Potato Casserole is a creamy, cheesy baked potato dish made with buttery mashed potatoes, sour cream, and melted cheddar cheese. Perfect for holidays, family dinners, or potlucks, this comforting casserole features a rich texture and a golden, flavorful topping.

Ingredients

  • 2 lbs potatoes, peeled and chopped

  • 3 tablespoons butter

  • ½ cup sour cream

  • ½ cup milk

  • 1 ½ cups cheddar cheese, shredded

  • 4 oz cream cheese, softened

  • 1 teaspoon garlic powder

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • ¼ cup green onions, chopped

  • ¼ cup breadcrumbs (optional

Instructions

  • Preheat the oven to 375°F (190°C) and lightly grease a baking dish.

  • Place the peeled and chopped potatoes in a large pot and cover with water.

  • Bring to a boil and cook for 15–20 minutes, or until the potatoes are fork-tender.

  • Drain the potatoes and return them to the pot.

  • Add the butter, sour cream, cream cheese, milk, garlic powder, salt, and black pepper.

  • Mash the potatoes until smooth and creamy.

  • Stir in half of the shredded cheddar cheese and mix well.

  • Transfer the mashed potatoes to the prepared baking dish and spread evenly.

  • Sprinkle the remaining cheddar cheese on top and add breadcrumbs if desired.

  • Bake for 20–25 minutes until the top is golden and bubbly.

  • Garnish with chopped green onions and serve warm

Notes

Russet or Yukon Gold potatoes produce the creamiest mashed potatoes.If using leftover mashed potatoes, simply mix in the remaining ingredients and bake.If the casserole seems dry when reheating, stir in a small splash of milk.
