Marshmallow Caramel Corn is a sweet and sticky treat with rich caramel and gooey marshmallows, coating crunchy popcorn for the ultimate indulgence.

Ingredients

  • 12 cups popped popcorn (about 1/2 cup unpopped kernels)
  • 1/2 cup unsalted butter
  • 1 cup packed brown sugar
  • 1/2 cup corn syrup
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1 (10 oz) bag mini marshmallows

Instructions

  1. Pop your popcorn and place it in a large bowl, making sure to remove any unpopped kernels.
  2. In a medium saucepan, melt the butter over medium heat. Stir in the brown sugar, corn syrup, and salt, and bring to a boil. Let it boil for 4-5 minutes without stirring, then remove from heat.
  3. Stir the marshmallows into the caramel mixture until completely melted and smooth. Stir in vanilla extract and baking soda (be cautious as it will bubble up).
  4. Pour the marshmallow caramel mixture over the popcorn and stir gently to coat all the popcorn evenly.
  5. Allow the caramel corn to cool for 10 minutes in the bowl, then transfer it to a baking sheet lined with parchment paper. Spread it into an even layer.
  6. Let the caramel corn sit until it cools completely (about 30 minutes) or place it in the fridge for quicker cooling.
  7. Once cooled, break it into pieces and serve. Enjoy!
