This Mango, Passion Fruit & Coconut Chia Pudding is a creamy, tropical, and healthy treat made with chia seeds, coconut milk, and fresh fruit. Perfect for breakfast, dessert, or meal prep, this easy no-cook chia pudding recipe is packed with fiber, healthy fats, and naturally sweet flavors.

Ingredients

  • 3 tbsp chia seeds
  • 1 cup coconut milk
  • 1 cup mango, diced
  • 2 passion fruits, pulp scooped
  • 12 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • 2 tbsp shredded coconut (optional)

Instructions

  • In a bowl or jar, combine chia seeds, coconut milk, honey or maple syrup, and vanilla extract.
  • Stir well to prevent clumping and let sit for 5 minutes. Stir again to evenly distribute chia seeds.
  • Cover and refrigerate for at least 2 hours or overnight until thickened.
  • Peel and dice the mango, and scoop out the passion fruit pulp.
  • Layer chia pudding with mango and passion fruit in serving glasses or jars.
  • Top with shredded coconut if desired.
  • Serve chilled.
