Ingredients

  • 8 oz pasta (bowtie, rotini, or penne)
  • 4 cups fresh baby spinach
  • 1 can (11 oz) mandarin orange segments, drained
  • 1/4 red onion, thinly sliced
  • 1/4 cup slivered almonds or chopped pecans
  • 1/4 cup crumbled feta or goat cheese (optional)
  • 1/4 cup dried cranberries (optional)
  • 1/3 cup poppy seed dressing or homemade vinaigrette
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and rinse with cold water to cool.
  2. In a large mixing bowl, combine the cooked and cooled pasta with fresh baby spinach.
  3. Add mandarin orange segments, red onion slices, and nuts.
  4. If using, add crumbled cheese and dried cranberries.
  5. Pour the poppy seed dressing over the salad and toss gently to combine.
  6. Season with salt and pepper to taste.
  7. Chill for at least 30 minutes before serving to let the flavors meld.
