Ingredients

  • 1.52 lbs chicken breasts or thighs
  • ¼ cup fresh lime juice
  • 1 tsp lime zest
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tbsp honey or brown sugar
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • Fresh cilantro (optional, for garnish)

Instructions

  • In a bowl, whisk together lime juice, lime zest, olive oil, garlic, honey, cumin, paprika, salt, and pepper.
  • Place chicken in a resealable bag or shallow dish and pour marinade over it.
  • Marinate in the refrigerator for at least 30 minutes (up to 4 hours for best flavor).
  • Preheat grill to medium-high heat.
  • Remove chicken from marinade and let excess drip off.
  • Grill chicken for 5–7 minutes per side, depending on thickness, until fully cooked.
  • Let rest for a few minutes before serving.
  • Garnish with fresh cilantro and extra lime wedges if desired.

Notes

Do not marinate longer than 4 hours—citrus can break down the texture too much.Chicken thighs stay juicier, while breasts are leaner.Letting the chicken rest keeps it moist and tender. You can cook this on a grill pan or bake if needed.
