Lightened Up Lobster Bisque is a creamy, elegant soup made with tender lobster meat, aromatic vegetables, and a velvety broth. Using milk and Greek yogurt instead of heavy cream, it delivers luxurious flavor with a healthier twist.

Ingredients

  • 2 lobster tails, cooked (meat removed, shells reserved for stock)
  • 2 tbsp olive oil or light butter
  • 1 medium onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1/2 cup dry white wine
  • 4 cups low-sodium seafood or chicken broth
  • 1 bay leaf
  • 1 tsp fresh thyme (or 1/2 tsp dried)
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper (optional)
  • 1 cup low-fat milk or half-and-half
  • 1/2 cup plain Greek yogurt
  • 1 tbsp lemon juice
  • Salt and black pepper, to taste
  • Fresh parsley or chives, for garnish

Instructions

  1. Heat olive oil or butter in a large pot over medium heat. Sauté onion, carrots, celery, and garlic until softened.
  2. Stir in tomato paste and cook for 2 minutes to deepen flavor.
  3. Deglaze with white wine, scraping up browned bits. Simmer until reduced by half.
  4. Add lobster shells, broth, bay leaf, thyme, paprika, and cayenne (if using). Simmer uncovered for 25–30 minutes.
  5. Strain the broth, discarding solids, and return liquid to the pot.
  6. Stir in milk and Greek yogurt, whisking until smooth and creamy.
  7. Add lobster meat, season with salt, pepper, and lemon juice. Simmer gently for 5 minutes.
  8. Serve hot, garnished with parsley or chives.
