Lemon Poppy Seed Cake is a light, moist, and flavorful dessert combining refreshing citrus lemon with the subtle crunch of poppy seeds. For the Cake:
1 ¾ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
½ cup unsalted butter, softened
1 ¼ cups granulated sugar
3 large eggs
2 tablespoons poppy seeds
1 tablespoon lemon zest (about 1 lemon)
1 teaspoon vanilla extract
½ cup buttermilk (or regular milk if needed)
¼ cup fresh lemon juice (about 2 lemons)
For the Lemon Glaze:
1 cup powdered sugar
2 tablespoons fresh lemon juice
Making the Cake:
Preheat the oven: Set to 350°F (175°C) and grease and flour a 9×5-inch loaf pan or an 8-inch round cake pan. (Use parchment paper for easy removal.)
Prepare the dry ingredients: Whisk together flour, baking powder, baking soda, and salt in a medium bowl.
Cream the butter and sugar: Beat softened butter and granulated sugar together with an electric mixer on medium speed until light and fluffy (about 3-4 minutes).
Add eggs and flavorings: Add eggs one at a time, mixing well after each addition. Stir in vanilla extract, lemon zest, and poppy seeds.
Combine dry ingredients and liquids: Alternate adding dry ingredients and buttermilk with lemon juice. Start and end with the dry ingredients. Mix until just combined—don’t overmix.
Bake the cake: Pour batter into the prepared pan, spreading it evenly. Bake for 50-60 minutes (for loaf) or 35-40 minutes (for round cake) or until a toothpick inserted comes out clean.
Cool the cake: Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before glazing.
Making the Lemon Glaze:
Prepare the glaze: Whisk powdered sugar and lemon juice in a small bowl until smooth. Add lemon zest for more flavor if desired. Adjust thickness by adding more sugar (for thicker) or more lemon juice (for thinner).
Glazing the Cake:
Once the cake is completely cool, drizzle the glaze over the top and let it set for a few minutes before slicing.
