Ingredients

  • 4 boneless, skinless chicken breasts (sliced or pounded thin)
  • 1 lb fresh asparagus, trimmed
  • 2 tbsp olive oil (divided)
  • 2 tbsp lemon juice (freshly squeezed)
  • 1 tsp lemon zest
  • 2 garlic cloves, minced
  • 2 tsp lemon pepper seasoning
  • Salt, to taste
  • Black pepper, to taste
  • Optional garnish: Fresh parsley or lemon slices

Instructions

  1. Season chicken breasts with lemon pepper seasoning, salt, and black pepper.
  2. Heat 1 tbsp olive oil in a large skillet over medium heat. Add chicken and cook 4–5 minutes per side, or until golden and cooked through. Remove from skillet and set aside.
  3. Add remaining olive oil to the skillet if needed. Sauté garlic for 30 seconds until fragrant.
  4. Add asparagus and cook for 3–5 minutes, stirring occasionally, until tender-crisp.
  5. Return chicken to skillet. Drizzle with lemon juice and sprinkle lemon zest over the top.
  6. Cook for another 1–2 minutes to blend flavors and heat through.
  7. Garnish with fresh parsley or lemon slices, and serve hot.
