Lemon Garlic Brussels Sprouts are a bright, savory side dish featuring crispy roasted sprouts tossed in fresh lemon juice and garlic. This simple recipe enhances the natural flavor of Brussels sprouts with a zesty, aromatic twist that’s perfect for any meal.

Ingredients

  • 1 lb fresh Brussels sprouts, trimmed and halved
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Optional: pinch of red pepper flakes
  • Optional: 2 tbsp grated parmesan or chopped fresh herbs (parsley, thyme, dill)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Rinse, trim, and halve the Brussels sprouts.
  3. In a large bowl, toss Brussels sprouts with olive oil, minced garlic, salt, and pepper.
  4. Spread them cut-side down on a baking sheet in a single layer.
  5. Roast for 20–25 minutes, flipping halfway through, until golden and crispy on the edges.
  6. Remove from oven and immediately drizzle with lemon juice and sprinkle with lemon zest.
  7. Toss to coat evenly. Garnish with red pepper flakes, parmesan, or herbs if using.
  8. Serve warm.
