Ingredients

  • 2 cups cooked chicken breast or thighs, shredded
  • 3/4 cup orzo pasta
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 8 cups chicken broth
  • 1 lemon, juice and zest
  • 2 tbsp olive oil or butter
  • 2 cups fresh spinach or kale (optional)
  • 2 tbsp fresh dill or parsley, chopped
  • Salt and black pepper, to taste

Instructions

  1. Heat olive oil or butter in a large pot over medium heat. Sauté onion, carrots, and celery until softened.
  2. Add garlic and cook for 1 minute until fragrant.
  3. Pour in chicken broth and bring to a gentle boil.
  4. Stir in the orzo and cook until tender, about 8–10 minutes.
  5. Add shredded chicken, lemon juice, and zest, stirring to combine.
  6. Toss in spinach or kale (if using) and cook until wilted.
  7. Season with salt, pepper, and fresh herbs.
  8. Serve hot with extra lemon wedges if desired.
