Lemon Butter Scallops are a quick and elegant seafood dish featuring perfectly seared scallops bathed in a bright, garlicky lemon butter sauce. Ready in under 15 minutes, it’s a gourmet-quality meal ideal for weeknights or special occasions.

Ingredients

  • 1 lb sea scallops (dry-packed, patted dry)
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon chopped fresh parsley (for garnish)

Instructions

  1. Pat scallops very dry with paper towels and season both sides with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat until hot and shimmering.
  3. Add scallops in a single layer, without crowding the pan.
  4. Sear undisturbed for 2–3 minutes until a golden crust forms.
  5. Flip and sear the other side for another 2–3 minutes until opaque and cooked through.
  6. Remove scallops from skillet and set aside.
  7. Reduce heat to medium and add butter and garlic to the same skillet.
  8. Cook for 1 minute, then stir in lemon juice and zest.
  9. Return scallops to the pan just to coat them in the sauce.
  10. Serve immediately, garnished with chopped parsley.

Notes

Use dry-packed scallops for the best sear and texture.Don’t move the scallops while searing to ensure a golden crust.Scallops cook quickly—avoid overcooking to prevent rubbery texture.Pairs well with pasta, risotto, salad, or sautéed greens.Use clarified butter for higher heat tolerance if desired.
