Leftover Turkey Shepherd’s Pie is a hearty comfort food dish made with tender leftover turkey, vegetables, savory gravy, and topped with creamy mashed potatoes baked until golden. This turkey shepherd’s pie recipe is the perfect way to transform holiday leftovers into a warm, satisfying family dinner.
2 cups cooked turkey, shredded or diced
3 cups mashed potatoes
2 tablespoons butter
1 small onion, diced
2 cloves garlic, minced
1 cup carrots, diced
1 cup peas
1 cup corn
1 cup turkey gravy or chicken broth
1 tablespoon tomato paste
1 teaspoon Worcestershire sauce
½ teaspoon salt
¼ teaspoon black pepper
½ teaspoon dried thyme
½ cup shredded cheddar cheese (optional)
Preheat the oven to 375°F (190°C).
In a large skillet, melt butter over medium heat and sauté the diced onion for 3–4 minutes until softened.
Add the minced garlic and cook for about 1 minute until fragrant.
Stir in the diced carrots and cook for about 5 minutes until they begin to soften.
Add the shredded turkey, peas, and corn to the skillet.
Stir in the tomato paste, Worcestershire sauce, and turkey gravy (or broth). Let the mixture simmer for about 5 minutes until slightly thickened.
Season with salt, black pepper, and thyme.
Transfer the turkey mixture to a baking dish and spread evenly.
Spread the mashed potatoes over the top, smoothing with a spatula to completely cover the filling.
Sprinkle shredded cheddar cheese on top if desired.
Bake for 25–30 minutes until the top is lightly golden and the filling is bubbling.
Garnish with fresh parsley before serving.
