This Kale Pasta Caesar Salad is a hearty twist on the classic Caesar salad, combining tender pasta, massaged kale, crunchy croutons, and creamy Caesar dressing. 4 cups kale, stems removed and chopped
8 oz short pasta (penne, rotini, or bowties)
¾ cup Caesar dressing
½ cup grated Parmesan cheese
1 cup croutons
1 tablespoon olive oil
1 tablespoon lemon juice
1 clove garlic, minced
Salt to taste
Black pepper to taste
Cook pasta according to package instructions until al dente (about 10–12 minutes). Drain and rinse briefly under cool water. Set aside to cool.
Place chopped kale in a large bowl. Drizzle with olive oil and lemon juice. Massage for 2–3 minutes until softened and darker in color.
Add cooled pasta to the bowl with kale.
Stir in Caesar dressing and toss until evenly coated.
Add grated Parmesan, minced garlic, salt, and black pepper. Mix well.
Top with croutons just before serving to maintain crunch.
