Jalapeno Coleslaw is a spicy twist on the classic coleslaw, featuring crunchy cabbage and carrots with the perfect heat from fresh jalapeños. Tossed in a creamy dressing, this zesty slaw is a must-try side dish for barbecues, tacos, or any meal needing a flavorful kick.

Ingredients

  • 1 small head of green cabbage, finely shredded

  • 1 medium carrot, grated

  • 2-3 jalapeños, seeds removed and finely chopped (adjust to your heat preference)

  • 1/2 small red onion, finely chopped (optional)

  • 1/2 cup mayonnaise

  • 2 tablespoons apple cider vinegar

  • 1 tablespoon Dijon mustard

  • 1 tablespoon honey (or sugar for a less sweet version)

  • Salt and pepper, to taste

Optional Garnishes:

  • Balsamic glaze or parmesan cheese for garnish

  • Fresh cilantro for garnish

Instructions

  • Prepare the Vegetables:

    • In a large mixing bowl, combine the shredded cabbage, grated carrot, chopped jalapeños, and red onion (if using).

  • Make the Dressing:

    • In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, and honey (or sugar). Season with salt and pepper to taste.

  • Combine:

    • Pour the dressing over the cabbage mixture and toss everything together until well coated.

  • Taste and Adjust:

    • Taste the slaw and adjust the seasoning as needed, adding more salt, pepper, or honey to balance the flavors.

  • Chill:
