Italian Pasta Salad is a vibrant, refreshing dish made with pasta, colorful vegetables, and a tangy Italian dressing. It’s perfect for any occasion and easily customizable to suit all tastes!

Ingredients

  • 1 lb pasta (rotini, penne, or bowtie work well)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red bell pepper, diced
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup black olives, sliced
  • 1/2 cup mozzarella cheese, cubed or shredded
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup Italian dressing (store-bought or homemade)
  • 1 tablespoon olive oil (if using homemade dressing)
  • 1 tablespoon red wine vinegar (if using homemade dressing)
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil (optional, for garnish)

Instructions

  1. Cook the pasta according to the package instructions, making sure to cook it al dente. Drain and rinse under cold water. Set aside.
  2. Prepare the vegetables: halve the cherry tomatoes, dice the bell pepper and cucumber, slice the red onion, and cut the olives.
  3. In a large bowl, combine the cooled pasta with the prepared vegetables, mozzarella cheese, Parmesan cheese, and olives.
  4. If using store-bought dressing, pour it over the pasta mixture. If making your own dressing, whisk together Italian dressing, olive oil, red wine vinegar, oregano, salt, and pepper in a separate bowl.
  5. Pour the dressing over the pasta and vegetables, tossing to coat everything evenly.
  6. Cover and refrigerate for at least 30 minutes. Toss again before serving and garnish with fresh basil if desired.
  7. Serve as a refreshing side dish or light meal.

Notes
