Ingredients

Instructions

  • Preheat the oven: Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper or a silicone baking mat.

  • Prepare the dough: In a large bowl, mix almond flour and powdered sugar. In a separate bowl, beat egg whites with an electric mixer until stiff peaks form (about 3-4 minutes). Gently fold the egg whites into the almond flour mixture. Add almond extract, vanilla extract, salt, and lemon zest (if using), mixing until well combined. The dough will be thick and slightly sticky.

  • Shape the cookies: Use a tablespoon or small cookie scoop to form dough balls. Roll them smooth and place them 1 inch apart on the prepared baking sheet. Optionally, press a whole almond into the top of each cookie for decoration.

  • Bake the cookies: Bake for 15-18 minutes, or until golden brown around the edges. The cookies should be slightly firm on the outside but soft inside. Let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
