Ice Cream Sandwich Cake is a no-bake, frozen dessert made by layering ice cream sandwiches, whipped topping, chocolate syrup, and candy or cookie toppings. It’s the perfect cool treat for summer parties, birthdays, or make-ahead entertaining.

Ingredients

  • 1216 vanilla ice cream sandwiches, unwrapped
  • 1 (8 oz) tub whipped topping (e.g., Cool Whip), thawed
  • 1/2 cup chocolate syrup
  • 1/4 cup caramel sauce (optional)
  • 1/3 cup mini chocolate chips
  • 1/2 cup crushed candy (e.g., M&Ms, Reese’s, or Oreos)

Instructions

  1. Line the bottom of a 9×13-inch freezer-safe dish with a layer of unwrapped ice cream sandwiches, trimming to fit as needed.
  2. Spread half of the whipped topping evenly over the sandwiches.
  3. Drizzle chocolate syrup and optional caramel sauce over the whipped topping.
  4. Sprinkle with mini chocolate chips and crushed candy.
  5. Repeat with a second layer of ice cream sandwiches, remaining whipped topping, more syrup, and toppings.
  6. Cover tightly with plastic wrap or foil and freeze for at least 4 hours, or until firm.
  7. Before serving, let the cake sit at room temperature for 5–10 minutes to soften slightly for easier slicing.
