A moist, warmly spiced cake made with bananas, pineapple, and pecans, then topped with tangy cream cheese frosting. This classic Southern dessert is festive, flavorful, and easy to make.

Ingredients

  • 3 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 3 large eggs
  • 1 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 2 cups ripe bananas, mashed (about 34 bananas)
  • 1 can (8 oz) crushed pineapple, drained
  • 1 cup chopped pecans or walnuts
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 34 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)
  • Optional: 1 tablespoon lemon juice or zest (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking soda, salt, and cinnamon.
  3. In a separate bowl, beat eggs, vegetable oil, and vanilla until combined.
  4. Stir in mashed bananas, drained crushed pineapple, and chopped nuts.
  5. Add the wet ingredients to the dry ingredients and stir until just combined — do not overmix.
  6. Divide the batter evenly between the prepared pans and smooth the tops.
  7. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool the cakes in the pans for 10 minutes, then turn out onto wire racks to cool completely.
  9. To make the frosting, beat cream cheese and butter until smooth. Add vanilla and lemon juice or zest (if using). Gradually beat in powdered sugar until desired consistency is reached.
  10. Frost cooled cake layers and decorate with extra chopped nuts if desired.
