Ingredients

For the salad:

  • 4 cups kale, stems removed and chopped
  • 2 Honeycrisp apples, thinly sliced
  • ¾ cup Manchego cheese, shaved or cubed
  • ½ cup toasted almonds or walnuts
  • ⅓ cup dried cranberries (optional)

For the dressing:

  • 3 tbsp olive oil
  • 2 tbsp lemon juice or apple cider vinegar
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  • Wash and dry the kale thoroughly. Remove stems and chop into bite-sized pieces.

  • Pour dressing over the salad and toss until evenly coated.
