Homemade turkey sausage is a lean, flavorful, and healthier alternative to store-bought sausage. Made with ground turkey and a blend of spices, it’s versatile enough for breakfast patties, crumbles, or even pizza toppings.

Ingredients

  • 2 pounds ground turkey (preferably 93% lean)
  • 1 tablespoon olive oil (optional, for extra juiciness)
  • 1 1/2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon dried sage
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 tablespoon maple syrup or brown sugar (optional, for sweetness)

Instructions

  1. In a large bowl, combine ground turkey with all seasonings and olive oil (if using). Mix gently until well incorporated without overmixing.
  2. For patties: Shape the mixture into 12 small rounds, about 3 inches wide.
  3. Heat a skillet over medium heat and lightly coat with oil.
  4. Cook patties for 3–4 minutes per side, until golden brown and cooked through (internal temperature: 165°F).
  5. For crumbles: Cook the seasoned mixture in a skillet, breaking it apart with a spoon until browned and fully cooked.
  6. Serve immediately or store for later use.
