Herby Mushroom Croissant Stuffing is a rich and savory twist on traditional stuffing. Ingredients

  • 68 day-old croissants, cut into bite-sized pieces
  • 2 tbsp olive oil (optional, for sautéing)
  • 2 tbsp butter
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 celery stalks, chopped
  • 8 oz mushrooms (such as cremini or button), chopped
  • 1 tbsp fresh sage, chopped
  • 1 tbsp fresh thyme, chopped
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste
  • 2 large eggs
  • 1 1/2 cups vegetable or chicken broth

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a baking dish.
  2. Cut croissants into bite-sized pieces and set aside.
  3. In a skillet, melt butter (with optional olive oil) over medium heat. Sauté onion, garlic, and celery until softened, about 5 minutes.
  4. Add chopped mushrooms and cook until browned and moisture has evaporated. Season with salt, pepper, sage, thyme, and parsley.
  5. In a large bowl, whisk together the eggs and broth.
  6. Add croissant pieces and mushroom mixture to the bowl. Gently toss to combine until croissants are evenly coated.
  7. Transfer the mixture to the prepared baking dish. Cover with foil and bake for 20 minutes.
  8. Remove the foil and bake for another 15–20 minutes, until the top is golden and crisp.
  9. Let rest for a few minutes before serving.
