A refreshing frozen treat made with Greek yogurt, fruit, and dark chocolate for a lighter, healthier version of classic ice cream bars. Creamy, customizable, and perfect for summer snacking or dessert.

Ingredients

  • 2 cups Greek yogurt or coconut yogurt
  • 23 tablespoons honey or maple syrup (optional, to taste)
  • 1 teaspoon vanilla extract
  • 1 cup fresh fruit (strawberries, blueberries, or banana slices)
  • 1 cup dark chocolate, melted
  • 1 tablespoon coconut oil
  • 1/4 cup chopped nuts or granola (optional, for topping)

Instructions

  1. Mix Greek yogurt with honey and vanilla extract in a bowl until smooth.
  2. Pour the yogurt mixture into silicone ice cream bar molds or popsicle molds.
  3. Add sliced fruit into each mold, pressing gently into the yogurt.
  4. Insert popsicle sticks and freeze for at least 4 hours, until solid.
  5. Remove the bars from the molds once frozen.
  6. Mix melted dark chocolate with coconut oil and dip or drizzle over each bar.
  7. Sprinkle with nuts or granola if desired, then place on a lined tray and freeze for 10–15 minutes until chocolate sets.
  8. Serve and enjoy straight from the freezer.
