Healthy Frozen Yogurt Ice Cream Sandwiches are a light and refreshing frozen treat made with Greek yogurt, natural sweeteners, and wholesome crackers or cookies. They’re easy to make, customizable, and perfect for hot days or nutritious snacking.

Ingredients

  • 2 cups Greek yogurt (plain or flavored)
  • 23 tbsp honey or maple syrup (to taste)
  • 1 tsp vanilla extract
  • 1/2 cup fresh or frozen berries (optional)
  • 1216 whole grain graham crackers or healthy cookies
  • Optional Add-ins:
  • 2 tbsp mini dark chocolate chips
  • 1 tbsp chia seeds
  • 2 tbsp nut butter (for swirling)
  • 2 tbsp crushed nuts

Instructions

  1. In a bowl, combine Greek yogurt, honey or maple syrup, and vanilla extract. Mix until smooth.
  2. Stir in any optional add-ins such as berries, chocolate chips, or nut butter.
  3. Line a baking dish with parchment paper. Spread the yogurt mixture evenly to about 1/2 inch thickness.
  4. Freeze for 2–3 hours, or until firm.
  5. Break graham crackers or cookies into even squares. Cut the frozen yogurt into squares of similar size.
  6. Sandwich each yogurt square between two crackers or cookies.
  7. Place assembled sandwiches back in the freezer for at least 30 minutes to set.
  8. Store in an airtight container in the freezer until ready to serve.
