Hawaiian Chicken is a sweet and savory dish featuring juicy chicken simmered in a flavorful pineapple-based sauce with soy sauce, brown sugar, garlic, and ginger. Perfect for a tropical twist on a weeknight meal.

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs or breasts, cut into chunks
  • 1 cup pineapple chunks (canned or fresh)
  • 1/2 cup pineapple juice
  • 1/3 cup soy sauce
  • 1/4 cup brown sugar
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated or 1/2 tsp ground ginger
  • 1 tbsp cornstarch
  • 2 tbsp water
  • 2 tbsp cooking oil
  • 2 green onions, sliced (for garnish)

Instructions

  1. Heat oil in a large skillet over medium-high heat.
  2. Add chicken pieces and cook until browned on all sides. Remove and set aside.
  3. In the same skillet, combine pineapple juice, soy sauce, brown sugar, garlic, and ginger. Stir well and bring to a simmer.
  4. Add the chicken back into the skillet along with pineapple chunks. Simmer for 15–20 minutes until chicken is cooked through and tender.
  5. In a small bowl, mix cornstarch with water to create a slurry.
  6. Add the slurry to the skillet and stir until the sauce thickens.
  7. Garnish with sliced green onions and serve hot.

Notes

Add red pepper flakes or sriracha for a spicy version.Substitute tofu or tempeh for a vegetarian version.Use tamari for a gluten-free option.Can be made ahead and stored for up to 4 days in the fridge.Serve with rice, noodles, or salad for a complete meal.
