Ground Beef Burritos are a hearty, flavorful meal made with seasoned ground beef, rice, beans, cheese, and your favorite toppings all wrapped in a warm tortilla. Perfect for quick dinners, meal prep, or freezer-friendly lunches, they’re satisfying and easy to customize.

Ingredients

  • 1 lb ground beef
  • 6 large flour tortillas (burrito-size)
  • 1 cup cooked rice (white or brown)
  • 1 cup black beans or pinto beans, drained and rinsed
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1/2 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons taco seasoning or homemade spice blend
  • 2 tablespoons tomato paste or 1/4 cup salsa
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional toppings: sour cream, avocado, lettuce, diced tomatoes, hot sauce, cilantro

Instructions

  1. Heat olive oil in a skillet over medium heat. Add chopped onion and sauté until translucent, about 3–4 minutes.
  2. Add garlic and cook for another 30 seconds until fragrant.
  3. Add ground beef, breaking it apart with a spoon, and cook until browned and fully cooked. Drain excess fat if needed.
  4. Stir in taco seasoning and tomato paste (or salsa). Add a splash of water and simmer for 2–3 minutes until the mixture thickens. Season with salt and pepper to taste.
  5. Warm tortillas in a dry skillet or microwave until pliable.
  6. To assemble, add a layer of rice, beans, seasoned beef, cheese, and any desired toppings to the center of each tortilla.
  7. Fold in the sides and roll up tightly to form a burrito.
  8. Optional: Toast seam-side down in a dry skillet for 1–2 minutes per side until golden and sealed.
  9. Serve warm with salsa, sour cream, or guacamole if desired.

Notes

Use ground turkey or chicken as a leaner alternative to beef.Refried beans can replace whole beans for a creamier texture.Let filling cool slightly before assembling to avoid soggy tortillas.To freeze, wrap individual burritos tightly in foil and store in freezer bags for up to 2 months.Reheat frozen burritos in the microwave or oven at 375°F (190°C) for 20–25 minutes.
