Ground Beef and Zucchini Casserole is a hearty, comforting baked dish made with savory ground beef, tender zucchini, tomatoes, herbs, and melted cheese. It’s an easy and satisfying way to enjoy a nutritious meal that’s perfect for weeknights or meal prep.

Ingredients

  • 1 lb ground beef
  • 2 medium zucchini, sliced or chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 (14 oz) can crushed tomatoes or tomato sauce
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • 12 tbsp olive oil
  • 12 cups shredded cheddar or mozzarella cheese
  • 2 eggs (optional, for binding)
  • 1/4 cup breadcrumbs or grated Parmesan (optional topping)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add diced onion and cook until softened.
  3. Add minced garlic and ground beef. Cook, breaking up the beef, until browned. Season with salt, pepper, and Italian seasoning.
  4. Stir in crushed tomatoes or tomato sauce and simmer for 5 minutes.
  5. In the same or a separate skillet, lightly sauté zucchini slices for 3–5 minutes until just tender.
  6. In a greased 9×13-inch baking dish, layer sautéed zucchini and beef mixture evenly.
  7. If using eggs, beat them and pour over the mixture to help bind the casserole.
  8. Top with shredded cheese and sprinkle breadcrumbs or Parmesan on top, if desired.
  9. Bake uncovered for 25–30 minutes, or until bubbly and golden on top.
  10. Let rest for 5–10 minutes before serving.
