Grinch Stuffed Potatoes are a festive twist on classic stuffed potatoes, featuring creamy mashed potatoes and a vibrant green spinach and cheese filling, perfect for holiday gatherings.

Ingredients

  • 6 large russet potatoes
  • 1 tablespoon olive oil
  • 1/4 cup butter
  • 1/2 cup milk (dairy or plant-based)
  • 1/2 cup grated cheddar cheese (or vegan cheese if preferred)
  • 1 cup fresh spinach, chopped
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/4 teaspoon paprika (optional, for garnish)
  • Fresh parsley (optional, for garnish)

Instructions

  1. Cook the Potatoes: Preheat the oven to 400°F (200°C). Wash the russet potatoes and prick them with a fork. Place on a baking sheet and bake for 45-60 minutes, or until tender when pierced with a fork.
  2. Prepare the Potato Flesh: Once the potatoes are done, let them cool slightly. Slice them in half and scoop out the flesh, leaving a small border around the edges to form a shell. Set the potato skins aside.
  3. Mash the Potatoes: Mash the scooped-out potato flesh with butter, milk, garlic powder, salt, and pepper until smooth and creamy. Adjust seasoning as needed.
  4. Prepare the Green Filling: Heat olive oil in a small skillet over medium heat. Add chopped spinach and cook for 2-3 minutes until wilted. Stir in grated cheddar cheese and cook until melted and creamy. Add more milk if necessary to reach a spreadable consistency.
  5. Assemble the Grinch Stuffed Potatoes: Spoon the mashed potatoes into the potato skins, then top with the spinach and cheese mixture, ensuring each potato is fully stuffed with the green filling.
  6. Bake the Stuffed Potatoes: Place the stuffed potatoes on a baking sheet and bake for 10-15 minutes, or until golden on top and heated through.
  7. Garnish and Serve: Garnish with paprika and fresh parsley for a festive touch. Serve immediately and enjoy!

Notes

For a firmer crust, press the mashed potatoes into the skins more firmly before baking.Feel free to add other veggies like sautéed onions or mushrooms to the green filling for added texture and flavor. This recipe can be made vegan by using dairy-free butter, plant-based milk, and vegan cheese.
